The Easiest 4 Ingredient Pimento Cheese
The best snack on a hot southern day is some pimento cheese. Now this maybe personal preference, but you've got to try it! The crunch of toasted pecans with creamy mayo and two blends of cheese. Perfect for cookouts, just a snack, or as lunch in a sandwich. The options are endless. This never last long in my household and won't in yours either.
Equipment
- 1 small pan this is for toasting your pecans
- Food Processor or Cheese Grater for this recipe, I used a food processor
Ingredients
- 1 8oz of Medium Cheddar Cheese cut into cubes
- 1 8oz of Sharp Cheddar Cheese cut into cubes
- ¾ cup Mayonnaise I personally use Dukes mayo
- ⅓ cup of Chopped Pecans
- 1 4oz Jar of Diced Pimentos drained
Instructions
Toast the Pecans
- Heat small pan over medium heat and add chopped pecans.
- Spread nuts evenly and stir every 10-15 seconds.
- Continue this process for about 5-7 minutes. During this process your nuts will start to become fragrant. This is how you'll know they are ready.
- Remove from heat and set aside.
Combining in the Food Processor
- In your food processor, add your cubed cheese mixture. Slowly start pulsing your cheese.
- Make sure your doing it in quick motions. Using a spatula, you can scrape the cheese from the bottom to the top. This is to make sure everything is getting equally chopped. Be sure to not over pulse your mixture. You want a tiny pebble like consistence.
- Once desired consistence is met, add in your toasted pecans and drained pimentos. Give it 1-2 pulses or just until its combined.
- Add your mayo to your mixture and pulse a few times to combine all ingredients together. Use a spatula to scrape the sides and bottom of the bowl in between pulses to ensure everything is well combined.
- Transfer your pimento cheese to a serving bowl or airtight container and serve when ready. Hope your enjoy!
- This is paired well with crackers, celery sticks, or used as a spread in sandwiches.
Notes
Tips and Tricks,
- If you'd like you can add spices, like paprika to add a little heat.
- My favorite combinations are a Mary's super seed cracker, topped with a sweet heat jalapeño. You also have to try it in a grilled cheese. Trust me game changer
- This recipe can be modified however you like, no nuts, more mayo, or less pimentos. Completely your preference.
