Easy 4 Ingredients Tortillas and Loaded Breakfast Burritos
Tortillas are actually so easy to make and only require 4 ingredients and 15 minutes of your time. That is so worth it. They also make the absolute best loaded burritos. Fresh hot tortillas stuffed with crispy fried tater tots, soft fluffy eggs, crispy bacon, and loaded with cheese. Sign me up. You will be making this every Sunday morning for yourself and your family. The best part, you can store your tortillas for later use.
Equipment
- 1 Large Mixing Bowl
- 1 Rolling Pin
- 1 Large Cast Iron or Large Pan
- 1 Small Sauce Pot
- 1 Lined Baking Sheet Optional
- 1 Wire Rack Optional
Ingredients
Homemade Tortillas
- 2 Cups All Purpose Flour
- ⅓ Cup Lard
- 1¼ Cup Boiling Water
- 1 tsp Salt
Loaded Breakfast Burritos
- 5 Pieces Bacon cut in half
- Oil for frying your tots
- 2 Cups Frozen Tater Tots
- 2 Large Eggs
- 1 Tbsp. Milk or Heavy Cream
- ½ to 1 Cup Shredded Cheese
- Sauce of your Choice I use salsa verde
Instructions
Homemade Tortillas
- In your large mixing bowl, combine the flour and salt.
- Next add in your lard. Using your hands, mix your lard in your dry ingredients for around 2-3 minutes. You want it to reach a coarse crumb like texture.
- Once this is achieved, gradually add your boiling water into mixture. Stir until your dough comes together. Sprinkle flour as needed.
- Transfer your dough to a floured surface. Begin kneading your dough for around 3-5 minutes, until smooth and elastic. If dough is too sticky, add a little more flour; if dough is too dry, add a little more water.
- Divide your dough into 7 medium sized portions. Roll each portion into a ball.
- On a lightly floured surface, use a rolling pin to roll each ball into a thin circle. My are never a perfect circle, so don't worry too hard. They will still taste amazing.
- Heat your large pan over medium-high heat. Place your rolled-out tortilla onto your hot pan and let cook for 30 seconds to a minute. You will notice your tortilla will start to form bubbles, flip once multiple bubbles starts forming.
- Transfer your cooked tortillas to a plate and cover with a clean towel to keep warm.
Loaded Breakfast Burritos
- During your tortilla process, preheat your oven to 425℉. On a lined baking sheet, place your wire rack on top. Place your bacon halves on your rack.
- Once your oven is preheated, put your bacon into the oven. Cook for around 20-25 minutes, based off of your liking.
- In your small sauce pan, pour enough oil to submerge the tater tots. Heat your oil on high heat.
- Place one tater tot in to see when oil is hot enough. You'll hear popping noise and see bubbles around it. Once oil is ready, add the rest of your tots. Work in batches, to be sure to not over crowd your pot.
- Fry for around 3-4 minutes, or until they are golden brown and crispy. Stir occasionally to ensure they cook evenly.
- Once they are golden brown, use a strainer spoon to remove tots from oil. Using this help the oil to drain from the tots during the removal process.
- Place tots into a large bowl and sprinkle with salt. Give them a good toss to ensure even coats of salt among tots. Salt to your desire.
- For your eggs, crack your eggs into a medium sized bowl. Add in your milk or heavy cream. Use a fork or whisk to beat the eggs, until everything is combined and slightly frothy.
- Heat a large skillet over medium-low heat. Add a small amount of butter or oil to evenly coat the bottom of your pan.
- Pour your eggs into the heated pan. Let sit for a few seconds until they start to set.
- Using a spatula, gently stir and push your eggs from the edges to the center. Continues stirring and folding will help your achieve that soft fluffy texture you want to reach. Cook eggs to your desired doneness.
- Remove from heat and add your salt and pepper. Remove from pan to stop from continues cooking.
- Time to assemble our burritos. On your fresh hot tortilla, add crushed up tots. Then add your layer of bacon. Next add your layer of eggs and finish with your handful of cheese. Be sure you place your fillings in a line in the center of your tortilla.
- Fold the bottom edge of the tortilla up and over the fillings. Tucking it tightly underneath them, this helps the fillings to be secure and not falling out.
- Add your burrito to a heated pan to help seal the ends. Remove after 30 seconds- 1 minute.
- Serve with a sauce of your choice. We use salsa verde in my house. I hope you enjoy!
Notes
Tips and Tricks
- When rolling out your tortillas, gently pull around the sides to help create your circle look.
- Be sure to work fast when cooking your tortillas. They will burn fast.
- If your pan seems to hot, remove it, turn the heat down, and take a short break for a couple of minutes.
- Cooking your bacon in the oven is great for many reasons. I personally like it because, I don't have to babysit it and I can cook more than you could in a pan. The fat also drips off, which is a healthier options than frying.
